This is a favorite recipe of mine.

Spicy Chicken and Rice Soup

1 whole chicken*
1-2 jalapeno peppers
2 large green peppers
2 large sweet onions
2 TB of vegetable oil
1 can of tomato sauce
Salt and Pepper to taste
1 cup of rice*
1/2 cup of water

1) Boil the chicken whole until it starts to fall from the bone
2) take the chicken from the bone and set aside
     reserve 1 cup of chicken broth
3) wash and dice your peppers and onions
4) In large stew pot or dutch oven, add 2 TB of oil and 2 TB of chicken broth
5) Add your peppers and onions and saute until tender
6) Add your shredded chicken to the peppers and 1/2 - 1 cup of chicken broth, salt and pepper
7) simmer 15-20 minutes - taste test the "hotness" of your peppers. If they're not hot enough to suit your taste, add more jalapeno. If too hot, add another 1/2 cup of chicken broth.
8) Add one can of tomato sauce and 1/2 cup of water
9) Mix well, turn to low and simmer for one hour
10) Cook your rice according to directions
11) After your soup has simmered for one hour, serve over hot rice and enjoy.

*I love this recipe for the hot and sweet flavor but also because you can substitute beef and have an entirely different meal. Substitute with beef tips or cooked and shredded london broil. You can also substitute pasta for the rice.*
